Located in Volnay, Domaine de Montille is one of the most prestigious wineries in Burgundy, founded before the French Revolution and then recovered by Hubert de Montille in 1947. The Chardonnay grapes come mostly from a plot located on the Les Chalumeaux site (former 1er Cru downgraded by the INAO in 1975 due to unauthorized work on the land carried out by the previous owner, but still of superior quality to a normal AOC village) and for the rest from the two plots Les Levrons and Boudrières – Nosroyes. Fermentation takes place in lightly toasted barrels of various sizes (between 5 and 20% of which are new). The finished wine first rests in wood for about a year and for a further 4 to 6 months in steel tanks. The Puligny-Montrachet from Domaine de Montille is a wine of great elegance with a golden color and a broad and fragrant aromatic profile. On the nose, it reveals aromas of fresh fruit and white flowers, honeysuckle, and citrus. On the palate, it is smooth and lively. It has a silky texture, a savory character, and an acidic vein that leaves a refreshing and thirst-quenching sensation. The finish is long and recalls subtle notes of toasted almonds. Try it with scallop risotto, chicken in a creamy sauce, and goat cheese.
