Coming from a family of winemakers in Beaujolais, Paul-Henri Thillardon founded his winery in 2008 in the small Chenas appellation, banking on the enormous potential of this terroir. Today the winery, considered one of the best and most promising in Beaujolais, extends over approximately 12.5 hectares of vineyards and is managed by Paul-Henri and his brothers who apply organic viticulture and natural winemaking techniques. Moulin a Vent Sous la Roche by Domaine Thillardon is an organic and natural wine produced with Gamay grapes selected from the estate's vineyards planted on the opposite slope to Chassignol. Here the vines are rooted in soils composed of pink granite and are located about 400 meters above sea level with a south-east exposure. After manual harvesting and spontaneous vinification, the wine rests partly in cement and partly in old wood. This elegant Moulin a Vent has a clear and bright color with ruby ​​tones and some purple nuances. On the nose, it reveals a fragrant aromatic profile with notes of small red fruits and wild strawberries, some hints of dried flowers, and delicate spices. On the palate, it is fresh, lively, and fruity with gentle and velvety tannins and good depth. The finish is long and concentrated. It is excellent with veal or turkey, vegetarian pies, and mushroom risotto.
