The Fevre family are key players in Chablis thanks to Bernard Fèvre’s role in founding the La Chablisienne cooperative in 1923 where he and his son both served as president. In recent years Bernard’s grandson Gilles and his wife Nathalie have steered the family in a new direction by building their own winery and bottling under the family name for the first time. The Fevres also stand out for their commitment and dedication to the land; they operate from a belief that great wines must begin with great grapes. Gilles takes charge in the vineyards using organic and sustainable methods wherever possible, while Nathalie has optimised the winery using gravity flows and small temperature-controlled tanks so each plot can be vinified individually. Les Preuses is the family’s iconic Grand Cru set on a prime 2.30 hectare plot with deep marl and chalk soils on the right bank of the Serein river. The slope here is exposed to the south which means it benefits from maximum sunlight during the summer ripening period. In the winery Nathalie complements this exceptional terroir with 15 months of ageing on the lees, with 30% of the wine aged in new oak barrels. This helps add a touch of generosity and richness to the ripe orchard fruit and subtle streak of minerality. This is a perfect partner for grilled scallops or lobster as well as creamy chicken dishes.
