Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. The Lavantureux family has been involved in the wine business for many years, but it was in the 1970s that Roland Lavantureux began bottling his wines and created his own label. Today, Domaine Lavantureux is run by Roland's sons, David and Arnaud, who continue the family tradition with passion and talent. The Chardonnay grapes come from a 3-hectare vineyard located in the village of Lignorelles, where the vines, planted in the 1960s, benefit from a southeast exposure. After fermentation in steel vats, the finished wine rests in a mix of steel and used barrels (60 and 40% respectively) for 10 to 12 months. This allows for the perfect balance between structure, complexity, and freshness. Domaine Lavantureux's Chablis Vieilles Vignes is a fresh, elegant, and structured wine with a fruity and floral aromatic profile. On the palate, the wine is round and broad with a medium-light body and good concentration. It has savory notes and a long mineral finish. It can be served as an aperitif with seafood finger foods, but also pairs well with lobster and grilled poultry.
