Domaine Jean-Marc & Hugues Pavelot Savigny les Beaune Blanc 2023

A renowned winery in the Côte de Beaune in Burgundy, Domaine Jean-Marc and Hugues Pavelot carries a long vinegrowing tradition passed down from father to son. The estate spans some 13 hectares of vineyards, where Jean-Marc and his son Hugues produce a dozen wines that reflect with great class the strong diversity of the terroirs at their disposal. Savigny les Beaune Blanc from Domaine Pavelot is a blend of mostly Chardonnay with small additions of Pinot Blanc. The grapes come from two plots. The first, called Les Planchots, is planted with 55-year-old vines on deep, sandy soils. The second, called Les Vermots, is much younger (about 15 years old) and is located on a hillside on limestone soils. The blend of the two vineyards produces a balanced and captivating wine, with an aromatic character, which rests for 12 months in barrels (25% new). In the glass, the wine reveals a bright color with golden reflections and a fragrant and broad aromatic profile with fruity notes of citrus and stone fruit, followed by mineral hints and nuances of dried fruit. On the palate, it is rich and round, juicy and full-bodied, with a harmonious acidic vein and a long finish that recalls a distinct mineral vein. It works deliciously with poultry, grilled prawns, and cheese soufflé.
