Drink it now or hold it for a few years. No need to decant before serving. Domaine Fournier is a historic winery of the Sancerre appellation, in France’s Loire Valley. Since 1926 it has been producing wine from the small village of Chaudoux, steadily growing into the Sancerre flagship that it is today, run by a determined team of experts. They have received countless 90+ ratings and gold medals over the years, most notably for their crisp white wines. The estates of Sancerre take their Sauvignon Blanc very seriously. Soil types in the appellation can be divided into three: limestone-gravel, chalk, and flint, each giving a unique twist to the wine. “La Chaudouillone” is sourced from vineyards in the “Caillottes” terroir, found between the villages of Verdigny and Sancerre. Here the vines grow on soil composed of small limestone pebbles mixed with clay, giving us airy and aromatic wines. La Chaudouillone exhibits a powerful, clean nose, with impressions of ripe pear and citrus intensity. On the palate, it is elegant and well structured, with notes of green apple and sweet citrus. It has a luscious round texture but maintains an edge of minerality and an intriguingly herbal finish. Worthy of holding for a few more years. Enjoy it with light appetisers, or anything that contains a subtle herbiness to match the wine.
