Drink it now or cellar for up to 15 years. No need to decant but best to open it half an hour before service. Founded in Marsannay, just south of the Burgundy capital of Dijon, in 1972 by Charles Audoin and his wife Marie-Françoise, the Charles Audoin estate now covers some 14 hectares of vineyards that include some of the finest parcels in the Marsannay appellation. The estate, now managed by Charles' son Cyril, produces excellent value Burgundy wines that express themselves well when young but also evolve elegantly over time. The Pinot Noir grapes are carefully selected from vines around 40 years old. After harvest, the vinification and aging are done without the use of new oak, to allow the full fruit expression of the Pinot Noir. The result is a well-structured and characterful wine that excels in its regional appellation typicity and is reminiscent of wines from more prestigious appellations. It is an elegant wine with a bright ruby color and a delicately fruity aromatic profile with notes of cherry and plum and some light hints of spice and undergrowth. On the palate, it is fresh and lively with fine and well-integrated tannins and a persistent finish. Excellent with rabbit, chicken breast with mushrooms, roast pork ham or chicken liver crostini.
