Founded by Lebanese brothers Daniel and Georges Daou, DAOU Vineyards is located in the Adelaida district of Paso Robles. Here, the vineyards enjoy the ideal soil and climate conditions for producing Bordeaux-style premium wines and outstanding Cabernet Sauvignons. The Chardonnay grapes come from selected vineyards in specific sub-AVA zones of Paso Robles, at higher altitudes, with clay and limestone soils. These conditions are perfect for producing a wine in the estate's style that expresses strong varietal character and possesses the richness typical of Paso Robles wines, along with pronounced acidity and great balance. After vinification, the finished wine ages in French oak (30% new) for 7 months. The result is an elegant white with an intense and broad aromatic profile. On the nose, the DAOU Chardonnay Paso Robles reveals ripe aromas of pear and peach, tropical fruits such as papaya and pineapple, floral notes, and toasted bread. On the palate, it is rich and fruity, juicy, and vibrant. It has a seductive character, it is soft and smooth with a refreshing acidity and a long finish that recalls notes of crème brûlée and vanilla. This is an absolute must-try for all Chardonnay lovers and pairs beautifully with lobster, poultry, and Gouda cheese.
