Today, the vineyards extend over approximately 55 hectares and its excellent wines from native vines have quickly achieved great popularity. Primitivo grapes are harvested from the Salento vineyards between the end of August and the beginning of September, when they reach full ripeness, to ensure good concentration and softness in the wine. After fermentation at a controlled temperature in steel and a period of maceration, the finished wine is aged for 12 months in barriques. The result is a round and vigorous wine that is excellent to open immediately but can also remain in the cellar for a few years. In the glass, Collefrisio Primitivo reveals a bright and intense color with ruby tones and bright purple reflections. Its aromatic profile is lively and fruity with notes of plum, blackberry, blueberry, and a finish that recalls touches of cocoa. On the palate, it is soft, round, juicy and rich. It has a good body and velvety tannins. The finish is long and persistent and recalls intense fruity notes. It is the ideal wine with grilled red meat, pasta amatriciana, and meatballs in tomato sauce.
