Located in Provence, on a hill at the foot of the Maures mountains, overlooking the Mediterranean Sea and the port of Toulon, Clos Cibonne is an ancient estate owned by the Roux family since the late 1700s. Its name comes from Count Jean-Baptiste de Cibon, the first owner of the estate. The vineyards, which extend over approximately 24 hectares, are located in a natural basin a short distance from the sea and benefit from perfect soil and climate conditions for the production of quality wines. The Cotes de Provence Cru Classe Cuvee Speciale des Vignettes Rose is a limited-production wine made from grapes selected from the estate’s oldest vineyard, with vines over 60 years old. After manual harvesting, fermentation occurs spontaneously with indigenous yeasts in temperature-controlled stainless steel tanks. The finished wine then rests in old foudres on the lees and covered by a thin layer of fleurette, for a year . The particular combination of an uncommon grape variety and the use of an unusual aging process are the basis of this unique wine, characterized by an intense and fragrant aromatic profile. On the nose, it reveals intertwined notes of vanilla, quince, pear, candied fruit, and nuts. On the palate, it is fresh and round, full-bodied and ample, with a long, delicately spicy finish. On its own, it makes a special aperitif but it also pairs well with seafood and grilled white meats.
