Chateau d’Esclans is known all over the world for their famous Provencal rosé, Whispering Angel, but the hidden secret of the estate is their sensational Rock Angel. Made predominantly with Grenache and Rolle grapes grown in prime vineyards in La Motte en Provence, the harvest is conducted from sunrise to noon to maximise the levels of freshness in the finished wine. When the grapes arrive at the winery they are carefully sorted three times to ensure only the very best quality raw ingredients are used. Following a light pressing the grape must is fermented in a combination of 600 litre barrels and stainless steel tanks which helps to add extra complexity while showcasing the natural bright freshness of the grapes. The wine is then allowed to rest and settle for a short time before being bottled. The result is a serious and refined rosé which is equally suited to serving as an elegant aperitif or savouring alongside a long leisurely lunch or dinner. The vibrant red fruit and citrus character and light body make this an incredibly versatile gastronomic wine which pairs well with seafood, fish, chicken, and vegetarian dishes. Rock Angel also makes a sensational partner for fresh pasta served in a creamy sauce or a light fruit-based dessert if you wish to drink it throughout your meal.
