Created in 1955 by Liliane Olivier, on the estate founded in 1922 by her father Edmond, the Domaine Veuve Olivier Fils is located on the right bank of the Marne. Today it is the great-granddaughter of the founder, Sandrine Charpentier-Olivier, who takes care of the family vineyard. The grapes of the Domaine are pressed slowly and progressively in the latest-generation Coquard presses. The vinification by plot allows for the production of wines that represent the typicality of the terroir. All these elements give the Champagne Veuve Olivier et Fils freshness, fantastic aromaticity, balance on the palate, and great maturity. The wine is obtained from a blend of the three Champagne vines with a majority of red grapes (especially Pinot Meunier). The result is a fruity nose, and a palate focused on the vivacity, with a perceptible dosage. Champagne Veuve Olivier & Fils Perle de Lumiere Brut displays a bright gold color. It is a rich and vinous, joyful, and fragrant wine. On the nose, the wine shows a beautiful citrus fragrance with delicate chalky notes and white fruit (pear, apricot, and mirabelle plum). In the mouth, it is generous and lively with good freshness and a thirst-quenching finish. Delicious as an aperitif or in combination with scallops.
