Based in Taissy, near Reims, Maison Thienot was founded in 1985 by Alain Thienot and is now run by his children Garance and Stanislas. The company, which has quickly reached wide popularity, is considered a pioneer in Champagne in the use of winemaking technologies aimed at minimizing the addition of sulphites. The Vintage Champagne of Maison ThiƩnot is a classic Champenoise blend with a majority of Pinot Noir, the addition of Chardonnay and small parts of Pinot Meunier. To preserve the freshness and aromas of the wine, the vinification takes place in steel vats. The wine then rests for 7 years before being disgorged and released on the market. The wine reveals a bright color with golden straw tones, and fine and persistent bubbles. Its aromatic profile is broad and fragrant, with notes of pear and ripe apple and hints of bergamot. On the palate, it is elegant and delicate, juicy and fresh with a good concentration of fruit and a well-balanced acidity. The effervescence gives it a creamy texture. The finish is long and refreshing. It is excellent with creamed chicken, Italian veal with tuna sauce, or fish tempura.
