An appealing salmon pink colour in the glass, this Rosé showcases a subtle raspberry nose, with flashes of red and green apple, rose petals, and hints of cream. It is a blend of 60% Chardonnay and 40% Pinot Noir, which were macerated with the skins. The fruits were plucked from old, low-yielding vines, and the resulting wines were then blind taste-tested before being selected for the Prestige blend. Champagne JM Gobillard et Fils had humble beginnings. The family’s winemaking venture began in 1933, when Gervais Gobillard spent his life’s savings on one hectare of vineyards in Dom Perignon’s home village of Hautvillers. From there, a mighty winery grew, expanding into the family-run Champagne house that we know today. This Rosé Champagne treads the line between elegant and fleshy on the palate, with striking acidity and a chalky side, obtained from the Hautvillers soil. You can discover flavours of strawberry, raspberry, and zesty lemon, alongside hints of brioche and nuts, which come from 4 years of ageing in the Gobillard cellar. Enjoy it alongside a charcuterie board, as an aperitif, or pair it with a fine seafood dish.
