La Borderie is a young Champagne house founded by Simon and Marie Normand, using the 11 hectares of family vineyards located in the Cote de Bars. The company has vines with an average age of 50 years, which benefit from clay-limestone soils. The low yields and the careful care in the vineyard and in the cellar guarantee the production of elegant Champagnes with excellent concentration. The Pinot Noir grapes come from a parcel located in Merrey sur Arce, with vines of about 50 years that give low yields and enjoy south-west exposure. The vinification operations take place in stainless steel and the wine is aged in the cellar for 24 months. Produced only in the best years, the Douce Folie rosé champagne has a fragrant and fruity aromatic profile with notes of raspberry and cherry, currant, and wild berries followed by mineral and floral scents. On the palate, it is round and savory, concentrated and deep. It has a creamy texture and a persistent and fine mousse. The finish is long and mineral. It is the ideal wine to serve with a charcuterie board, with beef carpaccio, or with sautéed giant prawns.
