This is the flagship Blanc de Blancs Champagne from De Saint Gall, bursting with aromas of beeswax, lemon zest, cream and acacia flowers. It is made of 100% Chardonnay, from Premier Cru vineyards dotted around the Côte des Blancs and Montagne de Reims regions of Champagne. Behind the label Champagne De Saint Gall, there is Union Champagne, an enormous wine cooperative that has played a large part in maintaining Champagne’s spot at the top of the sparkling wine food chain, since 1966. Union was founded by grape growers, with plots in some of Champagne’s finest Premier and Grand Cru vineyards. These days it employs oenologists from 15 separate cooperatives and continues to grow, in both quality and reputation. The Premier Cru Blanc de Blancs is a fantastic starting point for Champagne beginners. It has a fresh, lively palate, packed with minerality and floral flavours. Look for notes of white peach, yellow plum and pure lemon, supported by subtle hints of honey and cream. It is a dry and refreshing drink, with longevity and an astoundingly balanced character. It will be perfect as an aperitif. You can also consider pairing it with richly textured fish or goat's cheese.
