Founded in Mareuil-sur-Aÿ, in the Vallée de la Marne, in 1818, the Billecart-Salmon Champagne House owns approximately 100 hectares of vineyards located mainly around Epernay and sources other grapes from selected winemakers in some of the best plots of the area. The company, which is still family-run, was created by the union of Nicolas François Billecart and Elisabeth Salmon and is now managed by François and Antoine Roland-Billecart. Brut Rosé is a classic blend of Pinot Noir, Pinot Meunier, and Chardonnay grapes sourced from vineyards in 28 municipalities in the Marne, and from various vintages. Fermentation takes place separately for each grape (with red vinification for Pinot Noir), for a period of approximately 3 weeks. This lively Champagne has a brilliant color with coral pink tones and a fine perlage. on the nose, it reveals an intense and fresh aromatic profile with notes of flowers and small red fruits. On the palate, it is lively, lean, and elegant, and has an excellent acidity. The finish is long and balanced with a refreshing vein that recalls notes of raspberry. Served chilled, it makes a wonderful aperitif but also goes well with salmon and giant prawns.
