The company, which has committed to sustainable agriculture and biodiversity for over 20 years, produces wines in limited quantities and ages the reserve wines in Magnum to guarantee freshness and maximum aromatic expression. The estate extends over approximately 18 hectares of vineyards in the villages of Chouilly, Bisseuil, and Damery. Gentilhomme Grand Cru Blanc de Blancs is produced, only in the best years and in limited quantities, from Chardonnay grapes carefully selected from the best plots of Grand Cru Chouilly. The dosage is low, to ensure the pure expression of the Chardonnay character. The wine displays a very fine effervescence and a delicate mousse. Its color is bright with golden tones. Its aromatic profile is complex and layered with notes of white fruit and citrus, buttery, and pineapple. On the palate, it is rich and round, fresh and balanced. It has a creamy texture and a long and elegant finish. It makes for a classy aperitif, but for the best food pairing, try it with mushroom risotto or an aged Comté.
