César Márquez is the nephew of the famous winemaker Raúl Pérez, and, after working with his uncle, he decided to start his wine production in 2015, in the Bierzo wine region. Here Marquez produces excellent quality wines from ancient vineyards and uses traditional methods to fully express the great potential of this region which is still little known to the general international public. The wine is made with Mencia grapes carefully selected and hand-harvested from centuries-old vineyards located in Valtuille, planted on clay soils, and cultivated without the use of pesticides and chemicals. In the cellar, Cesar Marquez prefers a non-interventionist philosophy with long macerations and spontaneous fermentations. The finished wine rests in oak barrels for 1 year. This wine has a lively and brilliant red color with cherry tones. On the nose, it reveals a fresh and intense aromatic profile with fragrant notes of red fruits and flowers and some spicy nuances. On the palate, it is light and subtle with a strong acid vein and velvety tannins. It is an elegant and harmonious wine that reveals a long and refreshing finish. It pairs beautifully with risotto mushrooms and veal.
