Celler Pasanau Ceps Nous 2021

Enjoy it now, or cellar for a few more years. Decant for 1 hour or more before serving. The Ceps Nous is a youthful red wine, bursting with exuberance and a bouquet of plums, ripe red berries, elderberries, and dried herbs, bringing a ‘garrigue’ element. It is made from approximately 40% Merlot, but the majority of the blend is Garnacha, along with a small smattering of other varieties. Celler Pasanau is a small family winery, and its vineyards exist entirely within the region of La Morera de Montsant. In the 1980s, the vineyard was taken over by Richard Pasanau, who modernised the winery and oversaw a huge increase in production. The Pasanau family’s land encompasses a wide variety of terroirs, but the grapes for this wine were harvested from a selection of their youngest vines. Ceps Nous is fresh and juicy on the palate, enveloping the mouth in flavours of ripe berries, sour cherry, plum, and dried Mediterranean herbs. Its tannins are fine and agreeable, and the drinking experience is driven by the wine’s elevated acidity. It can be cellared, but it is perfectly fine to enjoy Ceps Nous in its youth. Consider pairing it with soft cheese, poultry, or a savoury red meat stew.
