Located in Rutherford, in the heart of Napa Valley, Caymus Vineyards is a family-run California winery founded in 1972 by Chuck Wagner, along with his parents, Lorna and Charlie Sr., with just a small production of Cabernet Sauvignon at the time. Today, production continues to focus on Cabernet Sauvignon, with grapes sourced both on the valley floor and in the mountains surrounding the valley. The winery also produces a limited-run Napa Valley Zinfandel in homage to Charlie Wagner Sr., who was a big fan of the grape. The Cabernet Sauvignon grapes are selected from vineyards planted on stony, low-fertility soils with high planting density, on south-facing slopes where the micro-climate conditions are moderately warm and ensure full ripeness and great concentration. Caymus California Cabernet Sauvignon is a California red with a unique style. It is a rich wine with a dark, dense color. Its aromatic profile is intense with succulent notes of red berries, cassis, and blackberry, and some hints of spices and coffee. On the palate, it is soft and concentrated, full-bodied and powerful. The tannins are firm but ripe and the finish is long and elegant with notes of black cherry and blueberry. Excellent with a roasted lamb shank with herbs, a sirloin steak, or polenta with ragu.
