COS was founded in 1980 by three close friends, Giambattista Cilia, Cirino Strano and Giusto Occhipinti, who set out to bring a pioneering winemaking vision to their corner of south-eastern Sicily. Amongst their novel innovations is the issue of “giare” or large amphorae which are used to ferment and mature some of their wines, as well as embracing local varieties like Frappato. Little-known outside of its native Sicily, Frappato is sometimes compared to Gamay from Beaujolais since it typically produces light bodied red wines with plenty of freshness and fruit flavours. The grapes used in this version are sourced from Vittoria and are grown organically. They are carefully harvested at the end of September and vinified using wild yeasts in a combination of amphorae and concrete tanks. On the nose there are floral hints and plenty of red berry notes seasoned with dried herbs. The first sip reveals a light body, smooth tannins and ethereal red fruit flavours with a pure and clean finish. The vivacity and grace of this wine make it a great choice to serve slightly chilled on a hot summer’s day as a refreshing aperitif.
