Located in the Georgian capital of Tbilisi, Binekhi is an award-winning winery founded in 1994, that produces high-quality wines and spirits from indigenous and international grape varieties. The company vineyards extend for approximately 90 hectares and are distributed in various wine regions of the country, including the fertile Kakheti area. The wine is made in an artisanal way from the indigenous Georgian grape variety, Otskhanuri Sapere. The grapes are sourced from the best vineyards within the Imereti wine region. After fermentation, carried out in terracotta amphorae, according to the traditional Qvevri method, the finished wine rests for 6-12 months in oak barrels, before being bottled and released on the market. Binekhi Otskhanuri Sapere has a clear and intense color with cherry red tones and violet reflections. On the nose, it reveals a fragrant and pleasantly fruity aromatic profile with notes of red and black fruits, especially blueberries and black cherries, and hints of spices and cream. On the palate, it is rich and full-bodied with soft tannins and a balanced acidity. The finish recalls light spicy notes. Try it with roast pork, a rich meatloaf, and meatballs with tomato sauce.
