Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Located in the village of Chablis, Château Long-Depaquit was founded in the late 1700s. Today, this prestigious estate, one of the most renowned in the region, is part of the Maison Albert Bichot and has over 50 hectares of vineyards. The Chardonnay grapes come from the Premier Cru Les Vaucopins parcel located southeast of Chablis, on the right bank of the Serein river, in the commune of Chichée. The vines, about 30 years old, rest their roots on Kimmeridgian limestone subsoils and enjoy a southern exposure, on a steep slope. After manual harvesting, the vinification takes place in a mix of stainless steel tanks and used oak barrels, where the wine remains for 10 months on fine lees, before moving into steel tanks for a further 2 months of aging. Chablis Premier Cru Les Vaucopins is a wine of great class and quality, with a splendid color with golden hues and an expressive and broad aromatic profile with notes of apricot and quince, candied fruit and caramel and some light toasted and smoky notes. On the palate, it is energetic and lively, concentrated and mineral. It has a refreshing acidity and a long, persistent finish, reminiscent of flint. It pairs well with baked sea bass, oysters, and seafood.
